Avocado is one of my absolute favorite things to eat. I like it mashed, grilled, diced, and sliced. Here is a recipe from Atkins that can be used as a side dish, topping for salad, or even a great hearty condiment for pork or burgers. It is best served immediately after making to enjoy the freshest flavors.
1 pint cherry or grape tomatoes, halved
2 medium cucumbers, peeled and coarsely chopped
(I prefer 1 large English cucumber,not peeled)
2 Haas avocados, coarsely chopped
1/4 cup chopped red onion
1 1/2 tablespoons lime juice
1 teaspoon grated lime rind
1/2 teaspoon ground cumin
Salt and pepper
In a bowl, toss tomatoes, cucumber, avocado, onion, lime juice, rind, and cumin. Add salt and pepper to taste.
