Savory Saturdays: Potluck Pasta Salad

I love summer potlucks. There is just something special about socializing outside over a shared meal.

Unless that meal is a potential food poisoning hazard.

Unfortunately, I have experienced food poisoning on multiple occasions, two of which resulted in emergency room visits. Not fun. So, needless to say, I’m very leery of bringing salads coated in mayo or heavily creamy dressings.

Here is something I came up with for DW’s work potluck and field day on Friday. (Unfortunately the event was rained out, but we were able to serve it to our dinner guests with pizza that night.) It was also great leftover for lunch today too.

It was a little dry the next day, so I drizzled some more dressing on top.

 

Potluck Pasta Salad

1 box of Elbow Macaroni
1 English Cucumber, cleaned and diced
1 can Artichoke Hearts in brine, drained
1 container Feta Cheese, crumbled
A generous amount of mild Banana Pepper rings
Lite Greek Salad Dressing Vinaigrette
Salt & Pepper to taste

Boil Macaroni according to package directions, drain and run under cold water until cooled. Combine in a large bowl the macaroni and next 4 ingredients. Add salad dressing, salt & pepper according to your personal preferences.

*Adding cannelloni beans would make this a complete meal.
