Savory Saturdays: Beef Mix and Seafood Mix

I am pretty lucky to be home most days, and when I say “home”, I mean not having to clock in to a 9-5 job. Believe it or not  I am not sitting around in front of my computer all day in my pajamas (although the thought does cross my mind often). So sometimes 4pm sneaks up on me, as I hear the screeching wheels of the bus outside my house and children trampling through the kitchen asking, “What’s for dinner?”

Cooking things ahead of time has really helped me over the years get dinner on the table more quickly. Here are a couple of my favorite recipes.

The Meat Mix can be used as a base for Chili, Tacos, Spaghetti, Lasagna, or even Stroganoff.

Beef Mix

3 pounds ground beef (or lamb, turkey, or pork)
1 cup chopped onions
1 cup chopped bell pepper
1 can (16 ounces) tomatoes
1 can (8 ounces) tomato paste
garlic to taste

Simmer all ingredients until meat is cooked and onion is transparent. Divide mixture into three freezing containers. (I use the rectangular containers that our lunch meat comes packaged in.)

The Seafood Mix that can be used for Seafood Wraps or Tacos, Barbecued Seafood Pizza, Pasta, Quiche or even a Seafood Ratatouille.

Seafood Mix

3 pounds seafood (shellfish, fish filets, crab, shrimp, salmon, snapper, white fish, cod, or any of your other favorites), cut into bite-sized pieces
1 can (15 ounces) tomato sauce
1 can (8 ounces) tomato paste

Simmer all ingredients just until fish is cooked. Freeze in three equal portions.

It’s that simple. Even if you forget to take them out of the freezer the night before, they are a snap to defrost in the microwave.Use your weekend to prep, and then you have emergency dinners on hand during the week.
