I’ve always been a big slaw fan, however I’m not a big fan of mayonnaise and heavily saucy things. That’s why I love this broccoli slaw recipe. It keeps the focus on the fresh ingredients, and not on the dressing. It’s also a nice twist from the more predictable cabbage slaw. I did find, however, that it tasted better after it had time to absorb a little of the flavors instead of serving it immediately after mixing. And since you can buy broccoli slaw bagged in the salad area of the grocery store, prep time is a snap.
Sweet and Sour Broccoli Slaw
Prep: 4 minutes
1 tablespoon sugar (I used Splenda)
2 tablespoons cider vinegar
1 tablespoon canola oil
1/4 teaspoon poppy seeds
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
Dash of ground red pepper
2 1/2 cups packaged broccoli coleslaw
1. Combine first 7 ingredients in a medium bowl, stirring with a whisk. Add coleslaw; toss well. Serve immediately.
*Yield: 4 servings (serving size: about 2/3 cup). Calories: 62
